Vegitarians, muffin & cake lovers delight, it’s a good news for you. Now you have a chance to experience a whole new eggless fruit muffin with trouble free easy preparation steps. You only need maximum of 10 minutes for the mixing and just 25 minutes for baking to serve a muffin which is fresh and hot out of the oven.

Main ingredient of the Eggless Fruit Muffin is Superfine Wholegrain General Purpose Flour which is high in fibre and nutritional value compared to other types of flour available out there in the market.

1 Superfine wholegrain general purpose Flour 500 1
2 Sugar 500 3 *Mix all no:3 ingredients separately
3 Water 200 3
4 Baking Powder 8 1
5 Soft Margarine 200 2
6 Condensed Milk 50 3
7 Fresh Milk or Liquid Milk 100 3
8 Vanilla 10 4
9 Cashew chopped 50 5
10 Dates 50 5
11 Plums 50 5

 

Cooking Utensils Required

  • Hand Mixer
  • Spatula or a Spoon
  • Oven

 

Preheat the oven for 20 minutes at 180 C

  1. Beat SFWG General Purpose flour and margarine together in slow speed until mix it well
  2. Mix Sugar, Water, Condensed Milk and liquid milk together until sugar dissolves
  3. Mix both mixtures together and beat until get the creamy effect in the batter
  4. Add vanilla to the batter
  5. Add the fruits and mix well until all the fruits spread evenly
  6. Put the batter into muffin cups and bake for 15 to 20 minutes at 180c

 

Eggless Fruit muffin – Garnishes

  1. Frost with icing sugar
  2. Use whole cashew on the top.

 

Critical Points

  1. Sugar should dissolved in liquids  
  2. Soft margarine should mix well with the SFWG General Purpose Flour
  3. Baking color of top and checking inside the Muffin
